Kale Salad

5 cups chopped kale
1-2 tsp olive oil
1/8 tsp salt
2 cups chopped broccoli
1/2 cup sliced almonds
1/2 cup cheese optional (cheddar or feta work great here!)
1/4-1/2 cup shredded carrots
1/4 cup diced red onion
1/4 cup sunflower seeds
1/4 cup cranberries

Lemon Dressing
1/4 cup olive oil
2 tbsp fresh lemon juice
2 tbsp red wine vinegar
1 tbsp dijon mustard
1 clove garlic minced
1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp ground black pepper
1 tsp honey or sugar adjust + add to taste

Hibiscus Tea

Hibiscus Tea

1/2 cup dried Hibiscus flower
8 cups Water
1/4 cup Honey (add more if you like your tea sweeter)
3 tablespoons fresh Lime Juice

Boil the flowers in water. Strain then add honey and lime juice.

1 tsp honey or sugar adjust + add to taste

Turmeric Rice

Turmeric Rice

2 Cups Basmati Rice
4 Cups Vegetable Broth
2 tables plant-based butter
1 teaspoon sea salt
1 tablespoon of turmeric
¼ cup chopped onion
3 cloves of garlic

 

Instructions for Turmeric Rice

Heat pot on medium and add butter

Once butter is melted add rice. Stir into golden brown

Add all other ingredients and bring to a boil

Once at a boil lower to low heat and allow to simmer for 25 minutes or into liquid has evaporated.

Sit 5 minutes before serving.

Almond Butter

3 cups Raw Almonds
1/4 tsp salt
1/2 tsp Vanilla Extract

 

Preheat oven to 350F

Spread almonds on baking sheet & toast for 10 minutes

Transfer almonds to high-speed blender or food processor. Blend until smooth.

 

Honey Sriracha Glazed Salmon

Honey Sriracha Glazed Salmon

2 1/2 lbs to 3 lbs Sockeye Salmon (or any wild-caught Salmon)
1/4 cups Raw Natural Honey
1 tbs Sriracha
1 Garlic Clove minced
1/2 tsp Olive Oil
Few Sprigs of Thyme

 

1.  Mix Honey, Sriracha, Garlic, and Oil in a small bowl.

2. Line cookie sheet with foil and spray with non-stick spray.

3. Place Salmon on a cookie sheet and pat dry.

4. Pour glaze over Salmon and spread thyme across the top.

5. Let marinate for 15-20mins.

6. Preheat oven to 400 degrees.

7. Bake for 20 mins.

8. Enjoy

*Glaze can burn and cause smoke. Cook with caution*
